French chicken with peas & bacon

Ingredients

  • 6 rashers smoked streaky bacon

  • 8 chicken thighs

  • 2 garlic cloves, thinly sliced

  • spring onions, roughly chopped

  • 300ml chicken stock

  • 250g peas

  • 1 Little Gem lettuce, roughly shredded

  • 2 tbsp crème fraîche

Method

  1. Fry the bacon until it is crispy then remove from the pan.

  2. Fry the chicken until cooked.

  3. add the garlic and onion until the spring onion is bright green.

  4. add bacon and stock then simmer with a lid for 20 minutes.

  5. Turn up the heat and add the peas and lettuce into the sauce and cook covered, until the peas are tender and the lettuce has just wilted. Check the chicken is cooked through. Stir in the crème fraîche just before serving.
